Add flake.nix for those running new Nix commands

Pretty much what it says on the tin. We can get started with the nix-shell import https://nixos.wiki/wiki/Flakes#Using_flakes_project_from_a_legacy_Nix

Why? In my earlier experiments in other repos, it starts up faster and is more hermetic.
