we don't have anything about the `iterable__event_metrics` variable in the README (my b). this variable determines the event metrics that are [pivoted out](https://github.com/fivetran/dbt_iterable/blob/main/models/iterable__user_campaign.sql#L30) in quite a few of the final models

add some stuff to the README similar to [klaviyo](https://github.com/fivetran/dbt_klaviyo#filtering-conversion-metrics-to-pivot-out) perhaps
