This PR fixes the variables defined within the dbt_project.yml which had a Zendesk reference instead of Stripe. Additionally, this PR changes the staging model calls from references to variables (this was why the package was working previously with incorrect variable configs, because we never actually called the variables). This update was to ensure the variables are accurate and used in accordance with our standards.
