Unsure exactly how this would be surfaced in downstream models, but we may want to make use of https://github.com/fivetran/dbt_zendesk_source/pull/49 here in the transform package
I encourage others to chime in if this would be helpful to add, and specifically which end models would be most impactful to include these fields in.
