feat: migrate the canarychecker docs to docusaurus configuration from mkdocs

Migrating the site to docusaurus configuration; updated the docs according to the docusaurus configuration navigated and tested links and images to be working with local dev and with the production build as well.

for testing locally run the following command from /docs/docs/canary-checker dir first install the dependency with

npm i

npx docusaurus start .

visit the server at localhost:3000
