I ended up going with more generic loot tables because it was difficult to assign items to some enemies. The humanoid enemies (zombies, skeletons) are easy to figure out. It's less clear with creatures like the antlions or wyverns.
Probably not for the base game, but it might be cool to create a mod that features some crafting with enemy remains. Bones and "antlion pincers" could be for crafting weapons/armor. Rotting flesh and goblin teeth for alchemy.
Perhaps, it would be more logical to make it so that skeleton archers drop various bows, monsters drop things such as "antlion pincer" and so on. So items which are dropped correspond to type of enemy.
