I don't know how it's possible that I'm the first one to notice it, but here goes!
I originally went looking for the Flathub page for com.simplenote.Simplenote, and when it said "App Not Found" but found it in the Wayback Machine's recent capture history I thought "Impossible!" and started digging.
I'm aware of #319 (now). However, as an end-user, the "Status" link in the footer was the first place I checked to see if Flathub was "OK," and an SSL error there was not encouraging.
A random selection of links from the flathub.org main page that presently don't work, or don't return any results:
With a quick spot-check, I confirmed that the three apps listed above are all accessible from beta.flathub.org, so I assume this problem is related only to the main web site. That also means that if anyone comes here looking for a solution, you have a workaround: add beta. to the URL after the https:// and you will see the details page for your chosen app.
