[Feature Request] Evergreen builds #4

ioquake3 doesn't get regular releases, and hasn't for many moons. Instead of building off of pinned git revisions, could the Flathub builds be based off of the latest push to ioquake:main? Looking thru the changelog, it seems like main has some nice Quality-of-Life fixes since the 2023-08-15 build.

Ping @zturtleman: since you seem be keeping the lights on ioq3, would you like to share your input?

I think ioquake3 source code is in a good state right now but I can't guarantee it always stays that way.
