Remove device=all, replace with device=input

This way, we don't expose all of /dev to the package; and can further prevent malicious Minecraft mods from escaping the sandbox. We should make sure device=input works with e.g. controller mods before adding it. Using device=input instead of device=all will also mean forcing users to upgrade to a newer Flatpak version for game controller support.
