Z7 Beta: Install symbolic icon to the correct directory #139

Currently, GNOME shell will display the symbolic icon, which looks quite out of place in the app chooser and the dash. I suppose this should fix it.

Thanks! For reference, I asked upstream to package the colored SVG as well: https://forums.zotero.org/discussion/111089/new-logo-in-svg-format

I'll merge this as soon as GitHub catches up with the Flathub builder...
