doc: Update readme to better explain the project #21

Update the readme and give a better overview of the intention of the project. The explanation how to install west has been improved.

Have a lot of changes rolling in to make it more comprehensive @jonas-rem. Can close this soon but we need to merge #19 first. Else we will have a lot of changes ongoing simultaneously.
