Remove iText 5 support #325

Remove iText 5 support. iText 5 is EOL: https://github.com/itext/itextpdf

This can allow focus on using OpenPDF.

@andreasrosdal, can you please update the documentation regarding the PDF generation also? It looks pretty obsolete (iText5 is still used there which is not valid any more). https://flyingsaucerproject.github.io/flyingsaucer/r8/guide/users-guide-R8.html#pdf
