Changes to transects and timeseries plots #8

Hi @fmemuir , some changes we have made to Plotting.py, Toolbox.py and Transects.py, mostly around using the transects/intersects and also timeseries plotting.

Merged changes made to Plotting and Transects after bugfix day at ARC. Will need to find a cleaner way of collaborating in the future that doesn't require uploading and deleting driver files (Driver folder with .gitignore?)
