Find better icons for maximize/minimize and replace throughout

The icons being used currently are not always consistent or intuitive. For example, in dialogs they are the plus and minus icons and elsewhere they are the arrows pointing toward/away from each other. The plus icon is also used to add or create resources, which can cause confusion.
