I'm going after that. Unfortunately I don't have DOS PC and MIDI keyboard, so I
will just try to guess something out from the code. Even small improvement is
better than nothing :-)

Definitely agree. Me and some other fans of your work are going to pool
together to make an Adlib Tracker 2 album and put proceeds toward sending you a
DOS PC, MPU-401 cable, and MIDI keyboard if that's alright. :)

Ever wonder why it's called "Synth!" mode? The mode is supposed to provide you
with an option to use Adlib Tracker 2 as a monosynth, controlled from a DAW (by
MIDI) with sound sent back to the DAW, making use of AT2's versatile synth
editing.
As a consequence, it makes the tracking feature of AT2 quite useless as it is,
as you've observed since you're expecting MIDI to act as a master controller.
You could consider this an entirely new feature, not a bad one at that.

Sounds pretty arbitrary to me. Not sure why you'd want it to just be a
monosynth. There's 100's of more complex interesting sounding monosynths out
there. Anyhow yea, MIDI control could definitely be improved. I just tried
using my MIDI controller through the MPU-401 and reported the results.

Frankly, a RTFM on your behalf could've prevented a lot of disappointment :)
This is not really the place for opening up a post-mortem discussion why AT2
would or would not be suitable as a monosynth, especially since the feature is
already there. Fact is, this was (and still is) an actual practical use case of
AT2, so this feature was added to the software.
To give you an example: YMF262's distinctive sound characteristics combined
with AT2's instrument programming can easily create very atypical FM sounds
that are difficult to recreate with other FM synthesizers. An equivalent chip
such as the YMF744 can be used for low noise SPD/IF recording for use in a
studio environment, and at low cost.
The "Synth!" feature is distinct from a MPU-401 master controller feature,
which would have required a substantial amount of changes.
P.S. Anyone is welcome to submit a patch that improves MPU-401 master
controller support, I think it would be a pretty good addition to the software.
