Add topic mapping extension example.

Add topic mapping extension example. This works with nuscenes data.

I think this example should align more with the workflows we've heard - which is that you would use a variable to alias specific topics without some prefix. i.e. /some-id/image -> /selected_image or /image

I'd like to stick with nuscenes topics so it's easy for people to try this but I can have it make some unprefixed topics.
