Description Generate schemas/README.md for easier viewing & code review within this repo.

Seems mildly confusing having this duplicate what already exists in our docs, no?

This one will always be up to date, whereas the docs update infrequently (whenever we decide to push an update to the website).

This one will be included with each PR so it's easier to review the PR by looking at the rendered markdown.
