Improve version selection #26

Is there anything to add here? If not, could you please switch back to using the default (i.e. latest) versions for all Fractal components? Other than that, I'd say we can merge it.

For the record, I successfully tested this PR locally with this config.env:

FRACTAL_SERVER_GIT=674-remove-automatic-creation-of-default-dataset-when-creating-a-project
FRACTAL_CLIENT_GIT=565-align-with-fractal-server-new-feature-project-creation-does-not-create-a-dataset
FRACTAL_WEB_GIT=dataset-crud-updated
FRACTAL_DEMOS_GIT=67-align-with-new-server-feature-project-creation-not-creating-a-dataset-by-default

I think this is a great use case, where I could simultaneously review server/client updates with a work-in-progress fractal-demos branch and also test a new (unrelated to fractal-server updates, in this case) update of fractal-web.
