Setuptools knows to look in LICENSE for the license body

Note that the License field in package metadata is deprecated in favour of license expressions: https://packaging.python.org/en/latest/specifications/core-metadata/#license

Either way, the full license text is expected to be in the LICENSE file, and this doesn't change here.

In that case, let's use the proper expression: License-Expression: MIT
