Improve custom apps documentation

Explain the details for making this change. What existing problem does the pull request solve?

• The variables in the container files have default values already. Update the documentation to make this clear and add examples of how to customize.
• Bump example versions to the most updated minor version of each dependency (NodeJS, Python).
• Default to using docker instead of buildah, which works fine for most users.
