Beginners often don't know where to contribute to. It happened to me also. So I have added some popular resources where they can contribute. I think it will help them to start their open-source journey.

My apologies as PROJECTS.md already exists. I would like to add a few more organizations or projects in PROJECTS.md if that's okay @erictleung
