chore: add contributing file #123

Addresses #13

This may need a little polishing.... I took a copy of the main freeCodeCamp and tailored it to open-api. There is quite a bit of duplication which does make it very approachable, but not very maintainable.

[x] Remove duplication from README, and link to CONTRIBUTING

Been open for a few days and I think this is heaps better than what we have at the moment.
