Update release notes for the 1.0.0 final release #288

I merged all the release notes from the previous pre-releases to make it easier for people upgrading from from v0.16.x. I hope I got it right, because there were some changes that were done and undone in the pre-releases for example. Please review with that in mind in case you find any release note that is inaccurate.
