As discussed in #7. Also, add a CHANGES.md file so that we can keep track of changes.

I realized only now that @Leonievb has had her own branch jaccard_default with the same change, so I now rebased this branch on top of it.

I will take the existence of the branch as approval and merge this now.

@leonievb: I have started a changelog in this PR so that it should be easy to see what has changed in TREX once you get back to it.

Hey Marcel, does that mean I can delete my jaccard_default branch? The change of the Jaccard default seems to be part of main now. Great and thanks for the changelog!
