We could make this a global property, and as long as we make sure that the US/EU parts have the exact same size, it shouldn't cause any problems.
However, it could cause more confusion than do good when people share their diagrams and others are confused (considering Fritzing diagrams a language, we would introduce ambiguity). I am not sure, if this si Fritzing related, but the US and EU symbols differs on the logic Gates too (not shown at posted link), see more here https://en.wikipedia.org/wiki/Logic_gate

Here is the EU resistor symbol attached. I created it from the original resistor.svg file. You can use it at the same license as Fritzing is.

having the right schematic would indeed be useful.
And why should US symbols better than EU symbols? US symbols only used in America. EU symbols the other world inclusive the biggest electronic parts manufacturers on the Planet (China).
How odd, that a company from the EU went with the US symbols first. Are most users for this program from there? I was looking for a way to change it, but it seems there is none. A pity.
I rarely see Euro symbols and I look at many schematics worldwide--maybe it is just me. I was curious as to what Wikipedia sez (pretty international): https://tinyurl.com/ya4kd47t At any rate, you are free to make your own library of symbols to suit your liking.
adafruit is an american company, and they use european symbols: https://learn.adafruit.com/adafruit-lis3dh-triple-axis-accelerometer-breakout/downloads (and all their other schematics, too).
So, what's your point?
We need european symbols, at least as an option.
I think there are two solutions A. Create additional parts with EU/China symbols and add the to Fritzing
B. Add some magic to the parts, and make this an option in "Edit -> Preferences -> Schematics View"
As first step (required by either A or B), we would need the SVG for the EU schematics, that match the US symbols in size and style (line width et cetera).
How annoying, github shows my pro + and contra - points as simple bullets.

Other than resistor (all types), inductor and capacitor, what other symbols are different?
Ground symbol, polarized capacitor, transformer, fuse, ... all of them differs from american style. https://en.wikipedia.org/wiki/Electronic_symbol look at the resistors - american style and IEC style
With all other programms the US and EU parts can be drawn in one schematic, and they stored with the schematic file and can be edited by user. On each computer where the file is opened, is looks same. But Fritzing has no working parts editor.
Remove imported label
As a workaround for the resistor you could replace this file (fritzing.0.9.3b.64.pc\fritzing-parts\svg\core\schematic\resistor.svg) with this file.
Note that you need to do this every time you reinstall the application!
