Double-check processes mix change calculations #224

Are they calculated correctly? Like if we go full floating wind turbines, we see 100% less water, but that's not true b/c there will still be some water usage.

Oh so what's happening here is that value is just the % change of e.g. water use for PROCESSES, not for everything. so perhaps we should be calculating the change over all uses of e.g. water, because that's intuitively how people (including myself who made it) interpret it
