Document differences between skopeo and image-assist #1

I stumbled upon this project and I was wondering what it can do that skopeo can't already do?

@SamyCoenen honestly I didn't check if anything else existed - it's a port of a script I already use and I wanted it to be managed both more openly and more sustainably. I'll check that one out a bit closer - but this one is more of a migration script... move all of these images with tag w from x to y with tag z (in bulk - one command)

@fubarhouse I see, instead of looping skopeo copy you can use a list here with image-assist that moves all of them in bulk.
