Removing use of mat prefix #39

updates to stl-to-h5m and brep-to-h5m mean we no longer need the confusing mat_ prefix

I've also noticed we were using a paramak_develop conda package which can also be updated to the paramak conda package as I've moved all the functionally to the main package now :tada:

@RemDelaporteMathurin I have updated the workflow as mentioned in https://github.com/fusion-energy/brep_to_h5m/issues/20#issuecomment-1077419525

It looks like we use latest versions of the packages so there wasn't much to do to get it working.

For pinning versions I have raised this issue #40 for your consideration

dockerfile needs rebuilding for tests to pass
