Add pedigree model and summary of available tools

This updates:

• pedigree-model.rst - with a summary of the pedigree conceptual model, how it works, and some examples
• working-with-model.rst - with a summary of KIN, the pedigree validator, pedigree-tools
• removes some unused files and references
