Improved the docker instructions in the readme to make them more self-service.

i’m usually doing docker build and docker run - so docker-compose is slightly foreign. Learnt something new today!

I'm secretly setting the stage for allowing users to use postgres instead of chroma… (because it's slightly more flexible, but only very slightly, like, maybe not even but just feels like it LOL)
