I've seen Arduino projects with strong UI through a Nextion display (with UI primitives essentially living in the display hardware). For example http://ubitx.net/2020/01/06/a-v6-nextion-display-conversion/ Cost-wise, probably not better than Raspberry Pi, though.

@mdubinko this is a good point. I will add this to the list of potential options for people to explore.

I agree when it comes to cost, these displays seem extremely expensive.
