Fix code to install (after change from master to main)

Thanks for the PR and while I understand it can be frustrating to have the install code not work, I'd like to normalize main as the default choice and not call it out at this time.

I did add instructions for installing from my r-universe repo, which is guaranteed to work with default R tooling.
