Remove references to old owner, update quay images

Good idea! I've started updating the references to github repo Shall I create the new quay.io image or are you already doing it? I guess we could then delete https://hub.docker.com/r/erasche/tripal/ and https://quay.io/repository/erasche/tripal? (I see no way to rename an image)

I'll leave the docker images so we don't break any existing workflows
