What this PR does / why we need it: This PR updates the terms used in the Getting Started guides and splits the Observability topic into a core topic and subtopics.

@BeckerMax I modified the Observability section by adding the Overview section to the main index and adding the content to a new topic - Components. Does this look alright to you?
