Adds more documentation for:

The schema customization API in the gatsby-node.js config
Adds links to official Gatsby docs for certain concepts
Adds documentation for the theme's exported components
Exports Link, Button, Heading, and Container components

WRT the GQL schema definitions, I think we should err on the side of teaching users how to use this (rather than disabling it) since this is considered best practices for setting things like this up. My guess is more and better docs directly in this starter will go a long way
