I assume by ‘projects’ that you mean datasets? There is a small trick to the URL search where you replace ‘search’ with ‘datasets’ as I have done here: https://www.gbif.org/occurrence/datasets?country=DE&taxon_key=131&year=2023&occurrence_status=present – then you get a list of datasets that have published amphibian data to GBIF in 2023, from country = Germany (data with and without coordinates – be aware that is you search by GADM area or use polygons, then you will only get georeferenced records). Some publishers, like iNaturalist, do have projects on their portal (for example https://www.inaturalist.org/projects/hswt-mapping-project) but they do not publish that information on to GBIF currently and you would need to go to their portal to find project information.
https://www.gbif.org/occurrence/charts?occurrence_status=present&country=DE&taxon_key=131&year=2023&d=datasetKey is a more natural place to see this
datasetName and datasetId is also used to model projects for some publishers (https://github.com/gbif/portal-feedback/issues/3006#issuecomment-1022960397) https://api.gbif.org/v1/occurrence/search?limit=0&country=DE&taxonKey=131&year=2023&occurrenceStatus=present&facet=datasetName
can i filter the data in such a way that i can see how many projects dealt with a certain species in 2023 in germany, e.g. how many projects dealt with the recording of amphibians in 2023 in germany?
