Update `initial guess` value in docs #14

I noticed that the docs are a little outdated in this area - the initial guess in the code is 0.95 while in the docs 1.1. Also, there are updates to the nk.yml and the code snippets from the docs don't match.

I wasn't entirely sure if I should only update the initial guess or the yaml code as well, so there are 2 commits to pick from(or maybe both).

Anyways, hope it helps and thanks for the package!
