fields with no language attribute needed #211

Related to #207 there is a need to leave language definition empty in some cases. Perhaps we can provide an selection option "undefined" which is default and removed the lang attribute from this tag in postprocessing.

It seems to work, since we now have the option “undefined”. However, where we have to enter the script code (incipit and title), there is always also a language mentioned. Doesn’t this lead us to enter contradicting information?

It might be more consistent to enter at least the option of undetermined language in Arabic script (that is the only example that we have currently) if possible according to the coding system at all.

This already works, if you do not select language for title or incipit. In this case, no lang attribut appears in XML.
