2 years ago I am having the same issue. This started with the latest OctoPod app update. It worked great until the update. I didn't see anything in the update patch notes that would indicate why it has been broken.
It is odd that it started for me with the app update, but you have been having the issue well before the latest update.
I'm running IOS 15.3.1 (19D52) on an IPhone 13 and Octopod regularly refuses to connect to either of my Octoprint Servers. It will come up with a port disconnect and will not display Webcam or temperature information (it will also display not refreshing icon after a while). After about 30 seconds showing disconnected the app will crash to the IOS Home Screen.
However, even though the app reports disconnected it will still send print progress notifications (every 25%) with a webcam image successfully.
The default Octoprint dashboard is also fully accessible through safari so my connection to the server is not being blocked by my network or iPhone.
Every now and then the app will connect and can be used fully, but any time the app is closed and reopened (for example to check a print progress) the app will report disconnected and crash.
