You want the demo to make it very easy for people to learn about the dodging mechanic, so you need to focus the demo on dodging. The playable character does not need the ability to attack.
Requirements
Code a top-down playable character that can move and dodge in any direction.
There is an enemy firing projectiles at the player (it could be a turret firing bullets to keep things simple).
When bullets hit the character, they "take damage" (play a little animation, no need to track health).
Dodging makes the player move fast and invincible (ignore/not detect hits) for a short duration.
To detect hits, use areas. You can reuse the HitBox and HurtBox nodes from the corresponding demo.
