Update role to default to Varnish 6.1 #84

5.x doesn't even have a Bionic release, so it would be better to default the role to 6.1.

Note that 6.1 is only released for EL7, Debian Stretch, and Ubuntu 16/18. So older OSes would not be supported by the default...
