adds Estonia metadata (moves Firenze)

I now see that uncommenting the data volume is part of the exercise: https://dive.pygeoapi.io/publishing/first/#making-data-available-in-the-docker-container Maybe we can just change the text to state that it is mounted already.

Good catch @justb4. I have pushed a fix to main branch to comment it out again.
