[FEATURE REQUEST] Gather all useful output/diagnostic files in one place after inversion #74

When copying output files for analysis off AWS, it can be tricky to gather up all the needed files. It would be convenient to have everything in one place. For example, make a copy of config.yml and HEMCO_diagnostics.nc in the results directory to make file transfer more convenient.
