Update environment.yml

[prisae]

An intent to make an environment that works for many notebooks, pinning many dependencies.

It is not ideal yet, not all notebooks work. I think geosci-labs has to be pinned as well, as many fail because of it.

I edited the README correspondingly. I also removed there the links to Azure and Travis, as I think they do not work any longer. I also removed the link to Binder; I think Binder uses the requirements.txt, which will fail.

Fell free to edit/undo/change as you see need.

Many thanks @prisae! I made a couple of tweaks to the environment, but I think we are now back in action
