OK, found it. In French, the workspace it not labelled workspace, but espacedetravail. So the URL should be http://localhost:8080/espacedetravail1/ which is not obvious as all forums scripts and so on talk about workspace. Maybe it'd be better:

We should at least add an extra endpoint that lists all available endpoints.
Rename the workspace (on the menu workspace -> rename); stop the stream server and start again. It will work!
In Gephi, create a new project with File > New Project, then Rename the workspace (on the menu workspace -> rename as "workspace1"). In the lower left view, click the "Streaming" tab, open the Master drop down, and right click Master Server > Start which starts the Graph Streaming server in Gephi and by default accepts requests at http://localhost:8080/workspace1 . It will work!!!

I'm currently running Gephi 0.9.2 (in French) under GNU/Linux Debian 9. Everything works OK, except I'm encountering the following error when trying to connect to the Streaming server.
Expected Behavior
I'd like to gather the json information issued by Gephi with the Streaming feature enabled with a curl or with my browser at the following address: http://localhost:8080/workspace1?operation=getGraph .
Current Behavior
I get a 404: HTTP ERROR: 404 Problem accessing /workspace1. Reason: Not Found Powered by Jetty:// I tried with workspace0, it's the same.
Possible Solution
No clue.
Steps to Reproduce
Context
I'm trying to dynamically create a graph based on data stored in Elasticsearch. This data changes with time, so new nodes and relations will be added/deleted over time, properties added... Will probably make my own Python script for that as I haven't found any other solution. For now, I'm just trying to connect to Gephi to grab or send data (add node, delete node or edge...).
