Middleware utils: what it looks like to replace all helpers with it #40

@sshader some updates to the middlewareUtils (I have some changes in convex repo I haven't pushed - can after testing

This moves a bunch of helpers to use middlewareUtils, partly as an exercise of comparison in case customFunction doesn't improve things

don't deeply review - haven't tested much
