As far as I am aware, the version of Code (the open-source base of VSCode and Cursor) that is used in Cursor is not usually the latest, as there is some compatibility work that has to occur when moving up a version. Therefore, it's likely that pre-release versions would not function as intended on the latest version of Cursor.
Additionally, there is some trickery that is in place to enable Cursor users to access and download VSCode extensions, as the VSCode extension library is proprietary to Microsoft. Therefore, this may not be possible anyway due to how this works. A Cursor dev may be able to chime in, but I'd be surprised to see as a priority in the near future.
To get around it, you can manually install the extensions. A forum post requesting a similar feature, and more info on the manual workaround can be found here:

It would be nice to enable install pre-release version of extensions. E.g. pylance 2024.8.1 has bug, and the pre-release version of 2024-9-100 can fix the issue. VSocde allow user to use pre-released version, it cursor can have the same option would be nice.
