Support Mac Catalyst #135

In the upcoming Ditto SDK 4.8.0 release, support is added for Mac Catalyst. Lets try to support those platforms here as well

Potentially makes sense to combine with https://github.com/getditto/DittoSwiftTools/issues/110?

tvOS support is added in https://github.com/getditto/DittoSwiftTools/pull/82, reducing scope here to only Mac Catalyst
