This pull request documents all new email plugin parameters. In addition to this, I also added the following fixes:

(c61af59) Added missing content_type parameter to email.yaml file
(d61cfeb) Added missing default parameter values vor ccand bcc (both are empty by default)

I hope everything is covered now? ;)
