  1. “Give me that book, you-you young pirates!”

  2. “I-I didn’t want to hit that poor animal.”

These are always debatable for changes as they usually denote some sort of stuttering. However, given my previous statement that rather change to emdash than don't, I would suggest changing them, as you have done.
